all purpose flour

vegan butter
dried apricot, chopped small
vegan butterscotch chips
egg
soy milk

Preheat the oven to 400° F
Make vegan buttermilk by combining all of the soy milk with the lemon juice. Let sit for at least 10 minutes.
Combine the vegan buttermilk with the egg and sugar. Whisk until well combined.
Combine flour, baking powder, and salt in a large bowl.
Cut butter into small cubes and drop into the bowl with the dry ingredients. Massage the butter into the dry mix with your fingers until a coarse crumbly mixture forms.
Stir in apricots, butterscotch chips, and the wet mixture. Mix gently until just combined.
Drop generous sized spoonfuls of dough on an ungreased baking sheet. Bake for 15-20 minutes.
