Add water to the dough slowly until it is elastic, but not wet. Continue kneading as you add water.

In a small bowl, whisk the egg and milk together until well combined.
In a stand mixer bowl, mix the flour, baking soda and butter.
Add the wet ingredients to the dry.
Use the dough hook to knead for 5-10 minutes.
