orange packet of Goya Sazon w/ coriander and annatto
packet or cube of bouillon
family special seasoning
tomato paste
stick of celery
bell pepper, seeds removed
red kidney beans
pork chop bones (optional)
In a pressure pot, add water to cover 1/2 of the pot (approximately 3 quarts). Bring to a boil and add beans. Boil uncovered for 20 minutes.
Add one cup of water and continue cooking until the water reduces to just below the middle of the pot, about 10 minutes.
Cover the pressure pot and when it starts to make noise, leave it for another 15 minutes. Let cool and then take the lid off.
Meanwhile, in a pan, add and stir together the special seasoning, Goya seasoning, bouillon and tomato paste.
Once the beans are cool, add the seasonings, celery, pepper and bones. Bring to a boil, and let boil for 20 minutes.
Remove celery, bones, and pepper. Serve over rice and enjoy.
