Photo credit to Mantitlement medium or 3 large beets, peeled and cut into chunks large sweet onion, chopped medium sweet potatoes, cut into chunks olive oil garlic powder salt black pepper sugar Preheat oven to 400 degrees. In a large bowl, toss the beets with 1/2 tsp of olive oil to coat. Spread in a single layer on a baking sheet. Bake beets for 15 minutes. Mix the remaining 2 tbs olive oil, garlic powder, salt, pepper, and sugar in a large sealable container. Place the sweet potatoes and onion in the container. Shake to coat. One the beets are out of the oven, mix in the sweet potato mixture. Pour back onto baking sheets. Bake for 45 minutes, stirring after 20 minutes. Serve and enjoy!
